The ageing process allows the natural enzymes to tenderise the muscle whilst the moisture loss concentrates the intensity of the flavour; the result is a deeply-savoury beef rump steak worthy of any table.

🥩 Chef’s Secret: Edge-to-Edge Pink

The Flip: Don't leave it still! Flip your steak every 60 seconds. This acts like a manual rotisserie, cooking the meat evenly and avoiding that "grey band" of overcooked beef near the crust.

The Finish: In the final minute, add a knob of butter, garlic, and rosemary to the pan. Spoon the foaming butter over the steak to enrich the dry-aged flavour.
