Ideal for beer lovers as the ale taste really packs a punch Our cheesery is next door to Phipps Brewery and we have teamed up with them to produce our Phipps Firkin Cheese. It has a subtle mottled look and infused with two types of Phipps real ale. Ideal for beer lovers as there is a strong hint of ale whilst eating. A great way to have an unusual cheese on the cheese board. The story behind the name; from the mid 15th century until 1824 the beer firkin was defined as a 9 ale or beer gallons. Matured for 120 days, this cheese is blended with two types of Phipps real ales to give a gently mottled appearance with a distinctive undertone of hops.
